This is the Sender: and Return-Path: headers, right?  This can only
cause problems on error returns, and assuming that the error return is
delayed until you are no longer connected (this can happen even though
you think you're connecting directly to the addressed host).  That is
an MTA issue, and should be handled by masquerading in the MTA config.
You should masquerade to the MX closest to you where you can receive
mail (probably TheEnglishman [at] ecosse.net), because (IIRC) you don't
have a stable, publically known, domain address for your local machine.

(Note that I can't see your original Sender: and Return-Path: headers,
because the list -- correctly -- rewrites them to point at itself.
From: is author -- you, Sender: is who decided to send the mail to the
addressee -- sheflug-bounce [at] vuw, at my request, and Return-Path: is
where to send errors -- the list owner, aka sheflug-bounce.)

Select Options | Edit Faces from the menubar, and edit the default
face.  This will fix everything that doesn't set its own background,
but you should peruse the other faces to see if there are contrast
problems or other faces whose backgrounds need to be changed.  Don't
forget to hit set and save.

C-h a is your friend.  Try C-h a "signature" RET.  Then click on the
variables "mail-signature" and "mail-signature-file".

C-h a doesn't always win, of course, but if you get in the habit of
using it I think you'll be surprised at how often your first guess
gives you something useful.
